"Lohikeitto" (salmon soup), "Rössypottu" (blodpalt soup), "Poro" (reindeer) are the must-try dishes.

For dessert you want to try "korvapuusti" ("örkky" in Oulu dialect) a cinnamon bun, "vispipuuro" ("lappapuuro") cold whipped porrige made of lingonberries or redcurrants, and "leipäjuusto" (sometimes "juustoleipä") bread cheese with cloudberry jam, sometimes also called Finnish squeaky cheese.
