

Inspired by ancient Maya agricultural techniques, Kanché is a gastronomic space that pays homage to the culture and nature of Yucatán. It is located in the Kinich restaurant's orchard, where local ingredients are grown and form an essential part of its culinary proposal. The name refers to the traditional elevated structures called ka'anché, used by the Maya to protect their crops. This project takes up that ancestral wisdom, combining it with bioclimatic design and architecture integrated into the environment. Kanché offers drinks and dishes prepared with national liquors and fresh ingredients from the garden, in an environment that invites you to connect with the history, the land and the cultural heritage of the region.
